Creamy Scallop Chowder

Since the Ravens won and the Superbowl is over, interesting Superbowl right. With the power outage. I'll tell you that gave the 49ers a big advantage .As they soon as the 35 minutes were over they were right back in the game. They still lost but with another field goal they would have tied it up. Anyway, I wanted to have one quick recipe before I go fool out-Valentines day  recipes. Which,FYI will be mostly desserts. I am thinking cookies,heart shaped brownies, cupcakes, and chocolate strawberries!!!!!!!!!!! Good thing about Valentines day- You  get chocolate and your house smells good with all the roses! Anyway talk too you about this later. Let me tell you a story. When I was like 9 years old my parents went to Charleston for 3 days. My mom's dad and step mom watched me and my sisters. Everyday we went out to dinner and lunch and ate cookies for snacks and went shopping everyday! It was a bucket load of fun! The only time we didn't eat out was the last day. Me and my grandpa made shrimp scampi with scallops in a white wine sauce. It was really good. So as you see its different from what we are making. Its COLD outside,at least here in Maryland. So I want 2 things,soup and hot chocolate. So the hot chocolate thing goes with this weekend when I make Double chocolate chunk cookies. But I can do the soup now! It feels so good to have a creamy hot soup after a long day. There are two major types of soups, broth and creamed. So this falls under the creamy category. I'm loving it.This is seriously restaurant quality. I have only had scallops a few times but I love them! They are so flavorful and sure scallops have an, lets say interesting texture but It goes so well with the creamy soup. Its super easy to make, so if you are ever having a cold hard day make this and the sun will shine. Want to know the weirdest thing. So the first time I made this it was a rainy,foggy,chilly,windy,horrible day. Everybody was in a bad mood and so was I. Luckily I was having this for dinner! As soon as a took the first flavorful spoonful the rain stopped. Isn't that weird. I think it was a message from the gods saying hoe good this stuff is!

OMG! I this should be in the world records for the best scallop soup! I don't think they do those kinds of records though.That would  be awesome to have my name in that book! Wouldn't it be? out are dang right it would be! Well I am gonna go call them up..................................................................Okay well I can't find the number anywhere even when looking online! So annoying! Anyway if I want to get rich and famous all I need if for y'all to try this. Well I will let you do that so bye!

Prep time- 10 minutes
Ready time- 20 minutes
Total time-  30 minutes
Makes 4 servings

Ingredients- 
1 pound scallops, rinsed and drained 
2 tablespoons butter 
1 bunch green onion, minced 
4 ounces fresh mushrooms, sliced 
2 tablespoons all-purpose flour
1 cup milk
1/2 cup dry white wine
1 teaspoon salt 
1 pinch ground white pepper 
1/2 cup shredded Swiss cheese 
2 tablespoons chopped fresh parsley 


Directions- 
 Wash and drain scallops. In a small  pot, melt butter over low-medium heat. Saute onions and mushrooms until cooked and tender.
Stir in the  flour. Pour in milk and stir over medium heat until thick and bubbly. Add wine, scallops, salt and pepper. Cook over medium heat until thickened.Top with Swiss cheese and fresh parsley.

Serve and enjoy!
