Duck with cherry sauce

Can you say delightful delicious dinner? Duck goes really well with berry's. One day I got some duck breast and decided to make a cherry sauce. The flavor of the cherry is amazing with the duck that you think they were made for each other. Try making this for a birthday or anniversary and you will have the best special day ever!!!!!!!!!!



Ingredients-
4 boneless duck breast
Salt and pepper
2 small shallots (minced)
1/4 cup of ruby port wine
1/3 cup of freshly squeezed orange juice and 1 tsp of orange zest
1/2 cup frozen black cherries chopped and thawed

Directions-
Preheat oven to 400
Score and season both sides of duck (use a knife to score and season with salt and pepper)
In a large nonstick skillet, over medium-high heat, place the duck breasts skin side down.
Sear the breasts until the skin is golden brown about 10 minutes Then sear  other side about 3 minutes.
Place the seared duck breasts in a backing dish skin side up, and put them in oven Cook for 12 minutes. Remove the duck breasts and let sit for  5-8 minutes
Pour off most duck fat from skillet, and place it back on the stove top over medium heat.
Add the shallots and saute  Pour in the port wine and orange juice,  (scrape of brown bits on the bottom of the pan).
Add the orange zest and chopped cherries and bring to a boil. simmer for about 5 minutes to reduce.
Serve with duck and enjoy
