I am a big Italian sausage fan.But to be honest I don't like mushrooms. One day Somebody gave 2 boxes of fresh mushrooms and I didn't what them to spoil so I knew I would have to make some. So I got to a butcher section in the store and find this amazing fresh looking sausage so I bought it and decided to make a stuff mushrooms with Italian sausage. This is a perfect side to any delightful delicious dinner sonothing left to say but enjoy!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
Ingredients-
16 large mushrooms
5 tablespoons of olive oil
2 1/2 tablespoons Marsala wine
3/4 pound Italian sausage
3/4 cup of scallion
2 tsp of garlic
Salt and pepper
2/3 cup of panko bread crumbs
5 ounces mascarpone cheese
1/3 cup shredded parmesan cheese
2 1/2minced fresh parsley
Directions-
Preheat oven to 350
Trim and chop mushroom stems
Put the top of the mushroom in a shallow bowl with Marsala wine and 3 tablespoons of olive oil.
Put 2 tablespoons of olive oil in a pan over medium heat and add sauge and crumble with a wooden spoon
Cook 8-10 minutes or until fully browned
Add mushrooms and cook 3 minutes
Add scallions,salt,pepper,and garlic stir occasionally
Add panko bread crumbs stir in with everything else in the pan
Then add Mascarpone cheese and cook till it is melted and the mixture is creamy
Take of heat and add parmesan and oarsley
Fill each mushroom and bake 50 minutes or until slightly brown
Serve and enjoy!!!!!!!!!!!!
