Mini onion quiches

I love quiche and I love to make really awesome creative ones by taking my favorite flavors and putting them to one delightful delicious dinner!!!!!!!!!!!!!!!!!!!!!!!!  The creative in because this crust is made out of saltine crackers (my favorite) Then for flavor I did a saute onion and egg quiche and this was a winner for dinner.

 Ingredients-
3/4 cups of crushed saltine crackers
1/2 sticks of melted butter
Another 2 tablespoons of butter (to saute onions)
1 cup of green onions (diced)
2 eggs
1 cup of milk
1/2 teaspoon of salt
1/4 teaspoon of salt
1cup of grated Swiss cheese

Directions-
Preheat oven to 300 degrees
Combine cracker crumbs and melted butter and put in in mini muffin pans(spray with a cooking spray). Saute onions for about 10 minutes in the 2 tablespoons of butter. Cool then put on top of cracker crumbs. Beat eggs then add milk, salt, pepper, and Swiss cheese. Pour  on top of onions in tins ( you may want to use a spoon and do not fill to top it rises a little and could overflow)Bake about 15 to 20 minutes.Serve and enjoy!!!!!!!!!!!!!!!

  1. This sounds delicious. Can't wait to try. Benjamin loves quiche. In your opinion, do you think I can substitute white cheddar? Uncle Joel can't eat Swiss. Thanks!
