How is everybody?!!!!!!! I feel like I haven't talked to y'all in forever.Sorry I had three days without putting anything up but man I have been busy ever since I have gone back to work (here comes me complaining again). Thank gosh its the weekend I would be in total madness if it wasn't. I will tell you the weekend goes by super fast. Well since its only to days I want to have some really good dinners.Tonight I am going to my BFF Claire's house for dinner with her family and I am making dessert.So I will be eating this most likely next week.I know what y'all are thinking-why not tomorrow so I will tell you,I had Cod for dinner yesterday and I don't want it again.I am actually having stuffed shells tomorrow for dinner as of now so,yeh. Anybody hungry?Well I am so I will be back.................................................(10 minutes later)I'm back.So where were we?Oh yeh I am eating stuffed shells tomorrow.Okay so lets talk some flavors on the cod shall we? Okay so say "we shall". So this has some white wine for that kick a little lemon juice for a tang and your gonna die at this-CRAKERS!!!!!!!!!! What I didn't tell you. Well I am telling you know.I like Ritz crackers but you can use pretty much anything.I would stay away from triscuits though.They might be AMAZING but the wheat dose not have the best compliment to the Cod.So what y'all say you going to dry this delightful delicious dinner? Ingredients-
2 tablespoons of butter
1/2 sleeve of crackers(I like Ritz),crushed
2 tablespoons of butter (to grease the pan)
1 pound thick,cut Cod loin
1/2 lemon juice
1/4 cup dry white wine
1 tablespoon chopped,fresh parsley
1 tablespoon chopped fresh onion
1 lemon,cut into wedges
Directions-
Preheat oven to 400
Place 2
tablespoons butter in a microwave-safe bowl; melt in microwave on high,
about 30 seconds. Stir buttery round crackers into melted butter.
Place
remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the
preheated oven, 1 to 3 minutes. Remove dish from oven.
Coat both sides of cod in melted butter in the baking dish.
Bake cod in
the preheated oven for 10 minutes. Remove from oven; top with lemon
juice, wine, and cracker mixture. Place back in oven and bake until fish
is opaque and flakes easily with a fork, about 10 more minutes.
Garnish with parsley and green onion. Serve with lemon wedges.
Serve and enjoy!!!!!!!!!!!
