I love onion soup. I have always loved that yummy part on top that sucks up so much soup it is almost soggy. I love the flavor of onion soup,mostly cause I love cooked onions so in the soup you kinda get that same flavor and its so flavorful. I wasn't always a fan of onion soup. I was on this Cruise to Mexico and I was going to dinner and I was like craving soup. So I got into my dining area and the only soup they had that night was onion. So I ordered the onion soup and it was great. I loved that cheese and bread part and I knew I had to get home and make it. So I start looking up recipes and I tried this one and it was awesome. It had perfect flavor and season and it taste great. I have been making it ever sense and I will tell you, it helps in the winter(not as much as hot chocolate but it still does help). This can be a lunch an easy brunch or a delightful delicious dinner. You can make this and time or day because its easy and dose not have many ingredients. ENJOY!!!!!!!!!!!!!!!!!!!!!!!!!!!
Ingredients-
1 onion, sliced into thin rings
1/4 cup margarine
2 cans beef consomme
2 cans beef broth
1 1/2 cups water
3/4 cup white wine
8 ounces sliced Swiss cheese
7 slices French bread
Directions-
In a large pot over medium high heat, saute the
onions in the butter or margarine for about 5 minutes, or until tender.
Add the consomme, broth, water and wine. Reduce heat to low and simmer
for 45 minutes.
Preheat oven to 350 degrees F
In individual oven-proof bowls, break up Swiss
cheese slices and place one slice in the bottom of each bowl. Place one
slice of bread on each slice of cheese.Pour in the soup, place another
slice of bread on top and cover with more Swiss cheese.
Put bowls in
the oven and allow cheese to melt on top.
